NEW VINTAGE OF SOBRENATURAL

The 2016 vintage of Sobrenatural is now available. Organoleptically, its delicious aromas of chamomile, Reinette apple, honey, white flowers such as honeysuckle, clove and wet stone stand out. In the mouth, Sobrenatural 2016 offers a fresh, enticing entry, an oily texture and pronounced mineral feel.

 

The must of the Verdeja ferments in stainless steel tanks with wild yeasts, then it is refined in the Menade by Secala cave for a minimum of 30/36 months in vats (large barrels) and in clay jars under a veil of flor yeast (biological aging). Then, it rests for at least another 16/24 months in the bottle before going on the market.

 

It is also possible to enjoy the third release of Adorado, our organic and oxidative aging wine made with Verdeja and Palomino, created using a 1965 solera. In the nose it recalls the wines of Marco de Jerez — spicy aromas, nuts and dried apricots — but in the mouth we perceive a more mature wine, more mineral and less saline.

 

Both wines, with which we aimed to return to our origins and recover our land’s past formulations, are of very limited production. We have bottled 4727 bottles and 62 magnums (1.5 litres) of Sobrenatural; and 2373 75cl bottles, 1483 magnums, and 35 demijohns (of 8 and 16 litres) of Adorado.
