SOBRENATURAL 2018 HAS BEEN RELEASED

The new vintage of Sobrenatural, one of our most special wines, has arrived—a true tribute to nature.

Climatic characteristics of the 2018 vintage.

The year 2018 is considered nearly perfect in terms of climate: it rained appropriately and remained cool when necessary. Precipitation occurred consistently throughout the vegetative cycle, especially during spring, with occasional summer storms. The use of natural treatments as preventive measures ensured a disease-free and healthy harvest.

We can say that it was a well-rounded vintage, with musts already showing vibrancy, tension, and great potential for ageing.

How is Sobrenatural made?

The production of Sobrenatural is long and complex, spanning five years, as crafting such a special wine takes time..

Sobrenatural is made from 100 percent Verdeja. All grapes are sourced from estates with clay-limestone soils containing pudding stones in the upper layers. The process begins with spontaneous fermentation using indigenous yeasts, followed by malolactic fermentation with wild bacteria, and does not involve the addition of sulphur.

Following these processes, Sobrenatural matures in the Secala-Menade 1820 cellar for approximately three years, aging in vats and clay jars under a layer of flor. After bottling, it further rests for an additional two years before it is ultimately ready for release.

It is a wine intended for extended ageing, crafted with the wisdom that time imparts, symbolising maturity and depth.

Food pairings.

You won’t have any trouble pairing Sobrenatural, as it’s a very versatile wine that goes well with any dish.

However, taking advantage of the good weather, here are a couple of recommendations for you to experiment with new recipes:

Vichyssoise with a hint of apple. Refreshing soups are very appealing in the heat, especially when you add a refreshing touch of tart apple.

Courgette carpaccio with toasted pine nuts. Zucchini is a vegetable that can be enjoyed raw or cooked, so you should try this version well-seasoned with the crunchy touch of toasted pine nuts.
