Adorado (solera 1900) 1,50 L. Secala – Menade 1820
A tribute to tradition.
“Adorado was born back in 1967, when wine was considered a food item, when it told the stories of the winegrowers of the Rueda region and when the vineyard was but a tangle of old Verdeja vines. Every year it received a small elixir of youth, under a layer of flor, within the criaderas and soleras system. With time it became rancid, oxidised, but there lies its greatness. Adorado is the wine of our grandfathers, fathers, children… Of the Sanz family”.
Adorado is a wine with biological and oxidative ageing, from a 1900 solera, created in the historic winery of the Sanz Family in Secala-Menade 1820 with the most spartan of technologies, our hands.
Our ancestors made this type of wine in concrete tanks located in the cellars, where, a layer of flor was formed naturally because of the constancy in humidity and temperature throughout the year. After the required time in these tanks, the wine was taken out and the fourth criadera was topped up.
In 1967, this system was halted because of a flood in Secala-Menade 1820. The solera ’travelled’ from one family winery to another… to Medina, Rueda, back to La Seca… until in 2018, Richard reactivated the criadera system but with his own take on it: the wine with which it was topped up, was made from Verdejo grapes from hundred-year-old vines, aged for about a year in earthenware jars under a layer of flor.
For Adorado, the grapes are harvested somewhat late, so that the grapes have a higher alcohol content and isn’t fortified. The layer of flor is generated naturally and never disappears.

AEVA (Virgen extra 0,50cl)
Extra Virgin Olive Oil from Rodilana, 100% Manzanilla Cacereña.
Olive trees located at an approximate altitude of 700 meters, with a cold climate in winter and hot and dry in summer. These climatic characteristics make it an oil of the highest quality. Cold extraction is performed.
AEVA extra virgin olive oil comes from olives cultivated using traditional methods, under ideal climatic conditions due to its location.
The olives are milled at low temperatures, allowing for the production of exceptional oil.
Tasting notes:
Clean grass-green color. Medium intensity fruity, with a predominance of ripe notes over green ones. Reminiscent of fresh olive, grass, and fig leaf, with a predominance of white-fleshed fruits, reinette apple, banana, pear, and also ripe tomato. In the mouth, it has a sweet entry, reminiscent of olive and apple, very fresh and slightly bitter and spicy, balanced, where spiciness predominates and the aftertaste is persistent.Gastronomic applications:
Consumed raw with green salads, cheeses, toasted bread, salmorejos, and gazpachos. Warmed with wok or steamed vegetables, and especially legumes, sauces, and dish finishes. Highly recommended for desserts with chocolate.Physical-Chemical Parameters:

La Custodia. Secala – Menade 1820

Includes a guided tour of Secala-Menade 1820, the winery built by the first Sanz generation in the town of La Seca. There you will explore the history of the family and the region, and taste 3 aged wines that are part of La Custodia: La Misión, Sobrenatural, and Adorado.
Next, visit Finca Menade in Rueda, concluding with a tasting of 5 wines paired with tapas made by local producers: Menade Verdejo, Nosso, Menade Sauvignon Blanc, Menade Sauvignon Dulce, and Nossa.

La Misión 1,50 L. 2022. Secala – Menade 1820
La Misión comes from hundred-year-old vines planted on estates with predominantly sandy soils.
Verdeja has distinctive structural features: the grapes are smaller, the bunches are more oval and because of its thick skin is more resistant to diseases such as botrytis.
The aromas are the expression of authentic verdeja: more rustic, but also more authentic. The analytical parameters reveal higher acidity and more concentrated grapes.
The grapes are harvested by hand and pressed as whole bunches. Fermentation takes place in stainless steel tanks using indigenous wild yeasts. It is then aged partly in 500-litre French oak barrels; partly in 5,000 and 10,000-litre vats or pipes, and partly in vats of different capacities made with a percentage of clay from Menade’s own vineyards.
After ageing for about a year, La Misión is bottled and refined for a period of time in the historic cellar. This is a return to a more earthy origin.

Includes a guided tour of Menade, the winery at Finca Menade (Rueda), where you will learn about the “eco-logical” relationship with the vineyard, the insect hotel, the pollination garden, Menade farm, and the winemaking process.
Afterward, you will taste 3 wines paired with a small sampling of products made by local producers.

Menade Sauvignon Blanc 2024
Exotic, mineral…
An international variety which for decades has adapted to the climate and soils of the area and which provides a pleasant and easy to drink wine.
In Rueda, the Sauvignon Blanc grape offers more tropical and stone fruit aromas, which combine with the minerality -from the limestone soils- and acidity.
As with the production of Menade Verdejo, we separate out the grapes depending on the characteristics of the soil and orientation of the plots from which they have come.
We work with low yields, alcoholic fermentation is carried out with natural yeasts in stainless steel tanks and the wine remains on its lees for a short period of time before bottling.

Menade Sauvignon Dulce 2024
Festive and sparkling.
The grapes come from different plots with clay-limestone and pebble soils, which are made separately according to the differentiation of structures and compositions of their soils.
It is the evening wine of the Menade family. Because of how it’s made, the Menade Sauvignon Blanc Dulce is the first wine to be released each year.
Alcoholic fermentation is carried out with natural yeasts in stainless steel tanks, but is stopped by lowering the temperature when the wine reaches a balance between alcoholic strength and residual sugar, i.e. approximately 10-11% Vol and 60 gr/l of residual sugar.
We are aiming for a wine that, albeit is sweet, is fresh and has acidity, and can be drunk as an aperitif or dessert.

Menade Verdejo 1,50 L. 2024
Fresh, wild…
Representing the freshness, the wildest side of the Verdeja variety.
The grapes come from different plots with clay-limestone soils and boulders in the Rueda area, which are processed separately. The vines are more than 30 years old.
We use natural yeast fermentation to achieve the maximum expression of our environment, aromas of fresh grass, minerality and liveliness.
The wine ferments in stainless steel tanks at a controlled temperature of 18-22ºC.
We use tanks of different capacities to separate the different plots according to the differentiation of soil structures and compositions.
Subsequent ageing of the wine is on its lees for a controlled period of time.
